Title: Dave's Coleslaw

This method will make enough for four to six as a side.

Get a small head of cabbage and cut it in half. Put one half back in the fridge for something else. :-)

Cut the core out of the half you keep. Using a large, sharp knife, slice the cabbage into fine shreds. Put the shreds in a big bowl. If you want some purple cabbage in the slaw for looks, you can use some instead of or in addition to the green cabbage.

Next, grate a couple of carrots into shreds. Put them in the bowl with the cabbage. Do the same thing with a small sweet onion (like a Vidalia).

Splash a couple of tablespoons of vinegar into the bowl on top of the cut veggies, and toss them well to combine. Drain a small can of crushed pineapple and save the juice. Add the pineapple to the bowl and toss again.

Now it's time for the mayo. With a serving spoon, drop in a couple of big dollops of mayonnaise. Mix it up well. If it looks to dry, add more. Add as much as you need to get the consistency you want.

Season with salt, pepper, and celery seed (go light on the celery seed, though. Too much will wreck it.) Give it a taste. If it's not sweet enough, drizzle in a little of the pineapple juice you saved and mix everything up again well.
